These fluffy cottage cheese pancakes are tender and airy with creamy pockets of cottage cheese and bursts of fresh blueberries, making for a nourishing and delicious breakfast.

  • 1 cup (240 ml) full-fat cottage cheese
  • 3 large eggs, room temperature
  • 3/4 cup (95 g) all-purpose flour, sifted
  • 1 teaspoon (4 g) baking powder
  • 2 tablespoons (25 g) granulated sugar
  • 1 teaspoon (5 ml) vanilla extract
  • Pinch of salt
  • 1/4 cup (60 ml) milk (whole or 2%, or almond milk)
  • 1 cup (150 g) fresh blueberries, washed and patted dry (frozen works too)
  • 2 tablespoons (30 ml) butter or oil for cooking

Instructions

  1. In a large bowl, whisk together the eggs and cottage cheese until fairly smooth but still a bit textured. For extra smoothness, blend them together for 15 seconds.
  2. Sift in the flour, baking powder, sugar, and salt. Stir gently to combine without overmixing; a few lumps are okay.
  3. Pour in the milk and vanilla extract, folding them into the batter until just combined. The batter will be thick but pourable.
  4. Gently fold in most of the blueberries, reserving a few for garnish. Be careful not to break the berries.
  5. Heat a non-stick skillet or griddle over medium heat. Add a small pat of butter or a splash of oil to coat the surface.
  6. Spoon about 1/4 cup (60 ml) batter for each pancake onto the skillet. Cook for 2-3 minutes until bubbles form on the surface and edges look set.
  7. Flip each pancake gently and cook for another 2 minutes or until golden brown and cooked through. Adjust heat if pancakes brown too fast.
  8. Serve warm, stacked on a plate, topped with remaining blueberries and drizzled with maple syrup or honey if desired.

Notes

Do not overmix the batter to avoid tough pancakes. Use room temperature eggs and milk for better blending. Medium to medium-low heat works best to prevent burning. Fresh blueberries are ideal, but frozen can be used if thawed and drained. Let batter rest for 5 minutes before cooking to activate baking powder. You can keep cooked pancakes warm in a 200°F (95°C) oven while finishing the batch.
