Flavorful Honey Chipotle Pork Tenderloin Recipe with Fresh Peach Salsa

A quick and easy pork tenderloin recipe featuring a sweet and smoky honey chipotle glaze paired with a fresh, tangy peach salsa. Perfect for summer or fall, this dish balances smoky heat, sweetness, and freshness for a memorable meal.

  • 1 pork tenderloin (about 1 to 1.25 pounds / 450-570g), trimmed of silver skin
  • 3 tablespoons honey (raw or wildflower preferred)
  • 1 to 1.5 teaspoons chipotle powder
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 2 medium fresh peaches, peeled and diced
  • ¼ cup red onion, finely chopped
  • 1 small jalapeño, seeded and diced (optional)
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 lime
  • Optional: pinch of smoked paprika or 1 teaspoon chipotle in adobo sauce

Instructions

  1. Remove the silver skin from the pork tenderloin and pat dry with paper towels.
  2. In a small bowl, combine honey, chipotle powder, minced garlic, olive oil, salt, and black pepper. Stir until well blended.
  3. Rub the honey chipotle glaze all over the tenderloin. Marinate in the fridge for 30 minutes to 1 hour if time allows (optional).
  4. Preheat oven to 400°F (200°C). Heat an oven-safe skillet over medium-high heat.
  5. Sear the pork tenderloin in the hot skillet for 3-4 minutes on each side until caramelized and crusty.
  6. Transfer the skillet to the oven or move the pork to a baking sheet if skillet is not oven-safe. Roast for 12-15 minutes until internal temperature reaches 145°F (63°C).
  7. Remove pork from oven and let rest covered loosely with foil for 5-10 minutes.
  8. While pork is roasting or resting, combine diced peaches, red onion, jalapeño, cilantro, and lime juice in a bowl. Toss gently to mix.
  9. Slice the pork into ½ inch thick medallions and spoon fresh peach salsa over the top. Optionally drizzle pan juices over slices before serving.

Notes

For a more intense glaze, brush extra honey chipotle sauce on the pork after searing and before roasting, watching closely to avoid burning. Do not skip resting the meat to keep it juicy. Make the peach salsa fresh just before serving to keep peaches firm and vibrant. Use a meat thermometer to ensure pork reaches 145°F (63°C) for safe and juicy results.
