These grilled chicken skewers feature a sweet and tangy honey balsamic glaze paired with juicy cherry tomatoes, perfect for easy summer BBQs and quick weeknight dinners.

  • 1.5 lbs boneless, skinless chicken breast, cut into bite-sized chunks
  • 1 pint cherry tomatoes (about 300 g), whole
  • 3 tablespoons honey
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Wooden or metal skewers

Instructions

  1. Prepare the marinade by whisking together honey, balsamic vinegar, olive oil, minced garlic, Dijon mustard, dried oregano, salt, and black pepper in a medium bowl until glossy and well combined.
  2. Cut chicken breasts into roughly 1-inch cubes and pat dry with paper towels.
  3. Add chicken pieces to the marinade and toss to coat thoroughly. Cover and refrigerate for at least 20 minutes, but no longer than 2 hours.
  4. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  5. Alternate threading chicken pieces and cherry tomatoes onto skewers, leaving some space between pieces for even heat.
  6. Preheat grill to medium-high heat (about 400°F). Lightly oil the grates to prevent sticking.
  7. Grill skewers for 10-12 minutes total, turning every 3-4 minutes to get an even char. Cook until chicken reaches an internal temperature of 165°F.
  8. Remove skewers from grill and let rest for 5 minutes before serving. Optionally, drizzle with leftover marinade heated to a boil.

Notes

Soak wooden skewers in water for 30 minutes before grilling to prevent burning. Marinate chicken for at least 20 minutes but no longer than 2 hours to avoid mushy texture. Keep grill at medium-high heat and turn skewers frequently to avoid burning the honey glaze.
