  • 1/2 cup (115g) unsalted butter, softened
  • Zest of 1 lime
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder (adjust to taste)
  • 1/2 teaspoon ground cumin (optional)
  • 1/2 teaspoon salt (or to taste)
  • Pinch of freshly ground black pepper
  • 2 tablespoons finely chopped cilantro (optional)

Instructions

  1. Husk the corn by peeling back and removing all the green leaves and silky threads. Rinse the ears under cold water and pat dry (about 5 minutes).
  2. In a medium bowl, combine the softened butter, lime zest, lime juice, chili powder, cumin, salt, and black pepper. Mix thoroughly until smooth and well combined. Stir in chopped cilantro if using (about 5 minutes).
  3. Preheat your grill or grill pan over medium-high heat (around 400°F / 204°C) until hot enough to sizzle a drop of water (about 10 minutes).
  4. Place the corn directly on the grill grates. Cook for about 10-12 minutes, turning every 2-3 minutes using tongs, until kernels have a few charred spots but are not burnt.
  5. Once grilled, immediately brush the ears generously with the chili lime butter so it melts into the kernels.
  6. Serve right away while still warm, optionally with extra lime wedges on the side.

Notes

Turn the corn frequently to ensure even cooking and prevent burning. If butter is too firm to spread, microwave for 10 seconds to soften. Chili lime butter can be made a day ahead and refrigerated; bring to room temperature before use. For a dairy-free option, substitute butter with vegan butter or olive oil spread. If no grill is available, roast corn in the oven at 425°F (220°C) for 20-25 minutes, turning halfway.
