A quick and easy tailgate snack featuring mini sweet peppers stuffed with creamy, spicy buffalo chicken dip. Bite-sized, mess-free, and perfect for casual gatherings.

  • 20 mini sweet bell peppers, halved and seeded
  • 2 cups (300g) cooked shredded chicken (rotisserie chicken recommended)
  • 8 oz (225g) cream cheese, softened
  • 1/2 cup (120ml) ranch dressing
  • 1/2 cup (120ml) buffalo wing sauce (e.g., Frank’s RedHot)
  • 1 cup (100g) shredded cheddar cheese
  • 1/4 cup (30g) blue cheese crumbles (optional)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Fresh chives or parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or foil.
  2. Rinse and dry the mini peppers. Slice each pepper in half lengthwise and remove seeds and membranes.
  3. In a medium bowl, combine shredded chicken, softened cream cheese, ranch dressing, buffalo wing sauce, garlic powder, and onion powder. Mix until creamy and well combined. Add more ranch or buffalo sauce if mixture is dry.
  4. Stir in shredded cheddar cheese and blue cheese crumbles if using.
  5. Spoon the filling into each mini pepper half, mounding slightly but not overflowing.
  6. Arrange stuffed peppers on the lined baking sheet with filling side up, leaving space between them.
  7. Bake for 15–20 minutes until filling is bubbly and peppers soften but still hold shape. Cheese should be melted and slightly golden.
  8. Remove from oven and let cool for 5 minutes.
  9. Garnish with chopped fresh chives or parsley and serve warm.

Notes

Soften cream cheese fully before mixing to avoid lumps. Do not overstuff peppers to prevent spilling during baking. Let peppers rest a few minutes after baking to firm up filling and mellow flavors. Filling can be prepared up to 24 hours ahead and refrigerated. For dairy-free versions, use cream cheese alternatives and vegan ranch dressings. Adjust spiciness by choosing mild, medium, or hot buffalo sauce.
