Easy Turkey-Shaped Thanksgiving Charcuterie Board

A fun and festive turkey-shaped charcuterie board that’s easy to assemble with simple ingredients. Perfect for Thanksgiving appetizers, this crowd-pleaser features a Brie and Camembert turkey body with salami, prosciutto, crackers, grapes, and nuts arranged as colorful feathers.

  • 1 large round of Brie cheese (about 8 ounces, or 225g)
  • 1 small wheel of Camembert (about 4 ounces, or 113g)
  • 2 slices of cheddar cheese
  • 2 black olives
  • 810 slices of salami (about 6 ounces, or 170g)
  • 68 slices of prosciutto (about 4 ounces, or 113g)
  • 1 cup of mixed crackers (about 100g)
  • 1 cup of red and green grapes (about 150g)
  • 1/2 cup of dried cranberries (about 60g)
  • 1/2 cup of pecans or walnuts (about 60g)
  • Fresh rosemary sprigs
  • Fresh figs (optional, about 4-6, halved)
  • Marinated artichoke hearts (about 1/2 cup, or 80g)
  • Cornichons or small pickles (about 1/2 cup, or 60g)
  • Honey or fig jam (for drizzling or dipping)

Instructions

  1. Prepare your board: Place your large cutting board or platter on a flat surface. If using parchment paper, lay it down now and trim the edges.
  2. Position the turkey body: Place the large round of Brie slightly off-center on the board, toward the bottom.
  3. Create the turkey head: Place the smaller Camembert or second Brie directly above the large Brie, slightly overlapping.
  4. Add the turkey face: Cut a small triangle from cheddar for the beak and a teardrop shape for the wattle. Place the beak in the center of the Camembert, pointing downward, and the wattle below it. Slice two black olives in half and place them above the beak for eyes.
  5. Build the feather base: Arrange a row of crackers in a fan pattern behind the Brie, about 1 inch apart, radiating outward.
  6. Add the meat feathers: Fold salami slices into quarters and arrange between the crackers. Roll prosciutto slices into rosettes and tuck into gaps.
  7. Fill in with fruit and nuts: Separate grapes into small clusters and tuck into the feather arrangement. Scatter dried cranberries and pecans or walnuts throughout.
  8. Add the decorative touches: Tuck fresh rosemary sprigs between the feathers. Add figs cut-side up, marinated artichoke hearts, and cornichons in small clusters.
  9. Place the dipping bowl: Set a small ramekin of honey or fig jam near the Brie.
  10. Final check and serve: Adjust feathers as needed. Serve immediately or cover loosely with plastic wrap and refrigerate for up to 2 hours. If refrigerated, let sit at room temperature for 15 minutes before serving.

Notes

Take cheeses out of fridge 30-45 minutes before assembling for best texture. If the turkey face won’t stay in place, use toothpicks (remove before serving). For a vegetarian version, skip the meats and double up on cheeses and vegetables. For gluten-free, use gluten-free crackers or cucumber rounds.
