These Easy Turkey Pinwheels are a no-cook, kid-approved lunchbox recipe that stays fresh and holds its shape. The trick is spreading cream cheese all the way to the edges to create a moisture barrier, preventing sogginess.

  • 8 ounces cream cheese, softened to room temperature
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup finely chopped green onions (green parts only)

  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 810 slices deli turkey breast
  • 46 leaves romaine lettuce, washed and dried completely
  • 1/4 cup sun-dried tomatoes, chopped (optional)
  • 2 tablespoons ranch seasoning mix (optional)
  • 1/4 cup crumbled bacon (optional)

Instructions

  1. Soften the cream cheese by leaving it out for 30 minutes or microwaving in 10-second bursts until soft but not melted.
  2. In a small mixing bowl, combine softened cream cheese, shredded cheddar, chopped green onions, chopped red bell pepper, garlic powder, and black pepper. Beat with a hand mixer on medium speed until well combined and fluffy, about 2 minutes.
  3. Lay a large flour tortilla flat on a cutting board. Ensure the tortilla is at room temperature.
  4. Spread about 3 tablespoons of the cream cheese mixture evenly over the entire surface of the tortilla, going all the way to the edges.
  5. Place 2-3 slices of deli turkey flat on top of the cream cheese, overlapping slightly to cover the entire surface.
  6. Lay 1-2 romaine lettuce leaves flat on top of the turkey, ensuring they are completely dry.
  7. Starting at one edge, roll the tortilla tightly into a log, keeping the filling tucked in. Press gently to seal the seam.
  8. Place the rolled tortilla seam-side down on a piece of plastic wrap. Wrap it tightly, twisting the ends to secure it.
  9. Refrigerate the wrapped rolls for at least 30 minutes (1 hour is better) to set the cream cheese.
  10. Unwrap the chilled rolls and slice each into 1-inch thick rounds using a sharp serrated knife with a gentle sawing motion.
  11. Serve immediately or pack in lunchboxes. Optionally, insert a toothpick through each pinwheel to prevent unrolling during transport.
