A quick and easy recipe for turkey and cream cheese pinwheels packed with colorful veggies, perfect for lunch boxes and snacks. These pinwheels combine creamy, crunchy, and savory flavors in a bite-sized, mess-free wrap.

Ingredients

Scale
  • 8-inch flour tortillas (soft and pliable)
  • 68 slices deli-style turkey breast per roll
  • 8 oz (225 g) cream cheese, softened (full-fat or light)
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • Red bell pepper, thinly sliced
  • Shredded carrot
  • Cucumber, seeded and julienned
  • Baby spinach leaves
  • Yellow bell pepper, thinly sliced
  • Optional: fresh herbs like dill or parsley, chopped finely
  • Optional: honey mustard or a light vinaigrette drizzle

Instructions

  1. Prep the Veggies (10 minutes): Wash all veggies. Thinly slice red and yellow bell peppers into 1/8 inch strips. Julienne cucumber and shred carrots. Pat spinach dry if needed. Keep veggies thin enough to roll but thick enough to maintain crunch.
  2. Season the Cream Cheese (5 minutes): Soften cream cheese in a mixing bowl. Stir in garlic powder, a pinch of salt, and black pepper. Adjust seasoning to taste.
  3. Assemble the Pinwheels (5 minutes): Lay a tortilla flat. Spread about 2 tablespoons (30 g) of cream cheese mixture evenly over the surface, leaving a 1/2-inch border. Layer turkey slices on top, then evenly distribute the vegetables over the turkey.
  4. Roll and Chill (15 minutes): Roll the tortilla tightly from one edge to the other. Wrap snugly in plastic wrap or parchment paper. Refrigerate for 15 minutes to firm up for easier slicing.
  5. Slice and Serve (5 minutes): Remove from fridge and unwrap. Using a sharp serrated knife, slice into 1-inch (2.5 cm) pinwheels. Arrange on a plate or pack into lunch containers. Keep refrigerated until ready to eat.

Notes

Warm tortillas in microwave for 10-15 seconds wrapped in a damp paper towel for easier rolling. Pat veggies dry to avoid soggy tortillas. Chill rolled tortillas before slicing for clean cuts. Store leftovers in airtight container in fridge up to 2 days. Best served chilled or at room temperature. For gluten-free, use gluten-free wraps or large lettuce leaves. For dairy-free, substitute cream cheese with plant-based spread.
