  • 1 teaspoon crushed red pepper flakes (optional)
  • 1 teaspoon whole black peppercorns
  • 1/2 teaspoon dried oregano (optional)

Instructions

  1. Wash and slice the banana peppers into 1/4-inch rings, removing seeds if less heat is desired. Pat dry.
  2. In a medium saucepan, combine white vinegar, water, sugar, and kosher salt. Stir over medium heat until sugar and salt dissolve.
  3. Add crushed garlic cloves, crushed red pepper flakes, black peppercorns, and dried oregano. Bring to a gentle boil, then remove from heat.
  4. Pack the sliced peppers tightly but gently into clean quart-sized mason jars, leaving about 1/2 inch headspace. Distribute garlic and spices evenly among jars.
  5. Pour the hot brine over the peppers, covering completely. Tap jars to release air bubbles, wipe rims clean, and seal with lids.
  6. Let jars cool to room temperature, then refrigerate. Allow peppers to pickle for at least 24 hours before tasting, best after 2-3 days.
  7. Keep refrigerated and consume within 3-4 weeks for optimum freshness.
