A fun and delicious Halloween guacamole dip shaped like Frankenstein’s monster, made with creamy guacamole, black bean hair, and olive eyes. Ready in under 20 minutes and perfect for parties.

  • 4 ripe avocados (Hass recommended)
  • 1 medium lime, juiced (about 2 tablespoons)
  • 1/4 cup finely diced red onion
  • 1 medium jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 small Roma tomato, diced (optional)
  • 1/2 cup canned black beans, rinsed and drained
  • 1/4 cup shredded mozzarella cheese
  • 2 black olives, sliced into rounds
  • 1 small strip of red bell pepper or carrot (for mouth)
  • Tortilla chips, for serving

Instructions

  1. Prep your ingredients first: dice the red onion, mince the jalapeño, chop the cilantro, and dice the tomato. Rinse and drain the black beans, slice the olives, and shred the cheese if using a block.
  2. Cut the avocados in half lengthwise, twist to separate, remove the pit, and scoop the flesh into a large mixing bowl.
  3. Add the lime juice immediately and stir to prevent browning.
  4. Mash the avocados to your desired consistency (about 80% smooth, 20% chunky) using a fork or potato masher.
  5. Fold in the onion, jalapeño, cilantro, and tomato. Add salt and pepper, then taste and adjust seasoning.
  6. Transfer the guacamole to a serving platter or shallow bowl and spread into an even oval shape, about 1/2-inch thick.
  7. Create the hair using the black beans: arrange them in a jagged line across the top of the oval, making a widow’s peak in the center by angling the beans downward. Overlap them slightly.
  8. Add the eyes: place two small rounds of shredded mozzarella cheese where the eyes should go, then place an olive slice in the center of each cheese round for the pupils.
  9. Make the mouth: use a thin strip of red bell pepper or carrot to create a jagged, stitched-looking mouth. Optionally, add two small cheese rounds below the mouth for bolts.
  10. Serve immediately with tortilla chips. If making ahead, press plastic wrap directly onto the surface and refrigerate for up to 4 hours; remove wrap right before serving.

Notes

For best results, use Hass avocados. If avocados are underripe, let them sit in a paper bag with an apple overnight. Press plastic wrap directly onto the guacamole surface to prevent browning. Have extra beans and olives on hand in case some break. The guacamole is best fresh but can be refrigerated for up to 24 hours with plastic wrap pressed onto the surface.
