These easy sheet-pan nachos are the ultimate game day snack, with every chip perfectly loaded with seasoned meat, melted cheese, and fresh toppings. Quick to assemble and baked on one pan for minimal cleanup, they’re a crowd-pleaser that disappears before halftime.

  • 1 lb ground beef (80/20 works great; can use ground turkey or shredded chicken)
  • 1 tablespoon olive oil
  • 1 packet taco seasoning (or homemade blend)
  • 1/4 cup water
  • 1 large bag (1316 oz) restaurant-style tortilla chips (sturdy, thick chips)
  • 3 cups shredded Mexican blend cheese (or cheddar and Monterey Jack; shred yourself)
  • 1 can (15 oz) black beans, drained and rinsed (or refried beans)
  • 1 cup diced tomatoes (Roma or cherry tomatoes)
  • 1/2 cup sliced black olives (optional)
  • 1/2 cup sliced pickled jalapeños
  • 1/2 cup chopped green onions (white and green parts)
  • 1/2 cup fresh cilantro, chopped
  • 1 large avocado, diced (or guacamole)
  • 1/2 cup sour cream
  • 1 lime, cut into wedges

Instructions

  1. Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with aluminum foil or parchment paper.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef and cook for 5-7 minutes, breaking it up, until browned and no longer pink. Drain excess fat if desired.
  3. Reduce heat to medium-low. Add taco seasoning and 1/4 cup water. Stir and simmer for 2-3 minutes until sauce thickens. Set aside.
  4. Spread half of the tortilla chips in an even layer on the prepared baking sheet.
  5. Sprinkle half of the seasoned beef, half of the black beans, and half of the shredded cheese over the chips.
  6. Add remaining chips on top. Repeat with remaining meat, beans, and cheese.
  7. Bake for 8-10 minutes, until cheese is melted and bubbly. Check at 8 minutes to avoid burning.
  8. Let cool for 2 minutes. Top with diced tomatoes, black olives, pickled jalapeños, green onions, cilantro, sour cream, and diced avocado.
  9. Squeeze fresh lime juice over everything. Serve immediately.

Notes

For best results, shred your own cheese (pre-shredded has anti-caking agents that prevent smooth melting). Use sturdy restaurant-style chips to avoid breakage. Don’t overload the pan—stick to two layers max. Let nachos rest for 2 minutes after baking to help cheese set. For extra crispy bottom chips, preheat the baking sheet in the oven before adding chips and toppings.
