  • 3 large bell peppers (mix of colors)
  • 1 large red onion
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 810 small flour or corn tortillas
  • Toppings: sour cream or Greek yogurt, shredded cheese, fresh cilantro, lime wedges, salsa, guacamole

Instructions

  1. Preheat your oven to 400°F (200°C). Place the rack in the middle position.
  2. Make the fajita seasoning: In a small bowl, combine chili powder, smoked paprika, cumin, garlic powder, onion powder, oregano, cayenne (if using), salt, and black pepper. Whisk with a fork to combine.
  3. Prep the chicken: Pat the chicken dry with paper towels. Slice into thin strips, about 1/2-inch wide.
  4. Prep the vegetables: Cut the bell peppers into strips, about 1/2-inch wide. Slice the red onion into thin wedges, about 1/2-inch thick.
  5. Toss everything together: Place the chicken strips, pepper strips, and onion wedges on a large rimmed baking sheet. Drizzle with olive oil and sprinkle with half of the seasoning blend (about 2 tablespoons). Use your hands or tongs to toss until evenly coated. Spread in a single layer.
  6. Roast for 15 minutes.
  7. Flip and continue cooking: After 15 minutes, remove the baking sheet from the oven. Use tongs to flip the chicken and vegetables. Return to the oven and roast for another 10-15 minutes, until the chicken is cooked through (165°F internal temperature) and the vegetables are tender with charred edges.
  8. Rest and serve: Remove the baking sheet from the oven and let it rest for 2-3 minutes. Warm your tortillas. Serve the fajita filling with warm tortillas and your favorite toppings.

Notes

For extra sizzle, preheat the baking sheet in the oven while it preheats. Pat chicken dry for better browning. Cut everything the same size for even cooking. Don’t overcrowd the pan. For more browning, broil for the last 2 minutes.
