  • 1 garlic clove, minced

  • Water to thin dressing as needed
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Pinch of chili flakes (optional)
  • 2 tablespoons olive oil

Instructions

  1. Rinse 1 cup quinoa under cold water using a fine-mesh strainer until water runs clear (about 30 seconds).
  2. Transfer quinoa to a medium saucepan with 2 cups water and a pinch of salt. Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 15 minutes.
  3. Remove from heat and let quinoa sit, covered, for 5 minutes before fluffing with a fork.
  4. Preheat oven to 425°F (220°C).
  5. On a parchment-lined baking sheet, toss chopped bell pepper, zucchini, cherry tomatoes, red onion, and broccoli florets with 2 tablespoons olive oil, 1 teaspoon ground cumin, 1 teaspoon smoked paprika, salt, and pepper.
