  • 1/4 cup (60g) plain Greek yogurt
  • 2 tablespoons (32g) peanut butter (creamy or crunchy)
  • 1 scoop (about 30g) protein powder (vanilla or unflavored)
  • 1 tablespoon (15ml) honey or maple syrup
  • 1 tablespoon (12g) chia seeds (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: extra peanut butter drizzle, dark chocolate chips, banana slices, crushed peanuts, cacao nibs, fresh berries

Instructions

  1. Combine the dry ingredients. In your mason jar or container, add the rolled oats, protein powder, chia seeds (if using), and a pinch of salt. Give it a quick stir with a spoon to break up any clumps in the protein powder.
  2. Add the wet ingredients. Pour in the milk, Greek yogurt, peanut butter, honey (or maple syrup), and vanilla extract. Don’t stir yet—just let everything sit on top of the dry ingredients.
  3. Stir vigorously. Use your spoon or a small whisk to mix everything together. Make sure you scrape the bottom and corners of the jar. The peanut butter can be stubborn, so really work it in. You want a smooth, uniform mixture with no dry patches. This takes about 30 seconds of solid stirring.
  4. Taste and adjust. Lick the spoon. Seriously. Is it sweet enough? Does it need more peanut butter? This is your chance to customize before it sets.
  5. Seal and refrigerate. Put the lid on your jar and place it in the fridge. Let it sit for at least 4 hours, but overnight is ideal. The oats need time to absorb the liquid and soften.
  6. Give it a final stir. Before serving, take the jar out and give it a good stir. The chia seeds may have settled at the bottom, and the peanut butter might have separated slightly. A quick mix brings everything back together.

Notes

For best texture, use rolled oats rather than steel-cut or instant. Let the peanut butter warm up slightly for easier mixing. Leave at least an inch of headspace in the jar as oats expand. If oats turn out too thick after sitting overnight, add a splash of milk and stir. If too thin, add a tablespoon of chia seeds and let sit for another 30 minutes. These keep in the fridge for up to 5 days. Do not freeze.
