  • 1 teaspoon vanilla extract (5 ml)
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 cup mini chocolate chips or raisins (optional, 40 g)
  • 1 tablespoon chia seeds or flaxseed meal (optional)

Instructions

  1. Mash the banana in a medium bowl with a fork until mostly smooth with a few small lumps remain (about 1-2 minutes).
  2. Add peanut butter and honey or maple syrup to the mashed banana. Mix well until fully combined and smooth (about 1-2 minutes). If mixture is too stiff, add a splash of milk (dairy or plant-based) to loosen.
  3. Stir in vanilla extract and ground cinnamon if using.
  4. Fold in rolled oats and any optional mix-ins like mini chocolate chips, raisins, or chia seeds. Mix until evenly distributed but do not overmix.
  5. Roll the mixture into 1-inch balls using your hands or a small cookie scoop, making about 15-18 bites. Wet hands slightly if mixture is sticky.
  6. Place the formed bites on a parchment-lined baking sheet and chill in the refrigerator for at least 30 minutes to set.
  7. Store the energy bites in an airtight container in the refrigerator for up to one week or freeze for up to one month.

Use ripe bananas with brown spots for best sweetness and moisture. Natural peanut butter without added sugar or oils works best. Chill bites before serving to help them hold shape.
