Ingredients

Scale
  • 2 cups (250g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup (170g) cold, cubed unsalted butter
  • 4 cups (about 4 medium) sliced peaches
  • 2 tablespoons lemon juice
  • 1/3 cup (65g) granulated sugar
  • 2 tablespoons brown sugar
  • 2 tablespoons cornstarch
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 cup (30g) rolled oats
  • 2 tablespoons brown sugar
  • 2 tablespoons melted butter

Instructions

  1. Preheat oven to 375°F (190°C). Line a 9×13-inch pan with parchment paper, leaving overhang on the long sides.
  2. Make the crust: In a large bowl, whisk together 2 cups all-purpose flour, 1/2 cup granulated sugar, 1/2 teaspoon baking powder, and 1/4 teaspoon salt. Add 3/4 cup cold, cubed unsalted butter. Use a pastry cutter or fingers to work the butter into the flour until the mixture resembles coarse meal with some pea-sized butter pieces.
  3. Press the crust: Transfer about two-thirds of the crust mixture to the prepared pan. Press firmly into an even layer. Bake for 12-15 minutes until lightly golden around the edges. Set aside to cool slightly.
  4. Prepare the peaches: In a medium bowl, toss 4 cups sliced peaches with 2 tablespoons lemon juice, 1/3 cup granulated sugar, 2 tablespoons brown sugar, 2 tablespoons cornstarch, 1/2 teaspoon cinnamon, and 1 teaspoon vanilla extract. Let sit for 5 minutes.
  5. Make the crumble: To the remaining crust mixture, add 1/4 cup rolled oats and 2 tablespoons brown sugar. Drizzle in 2 tablespoons melted butter and mix with a fork until clumpy.
  6. Assemble: Spread the peach mixture evenly over the pre-baked crust. Sprinkle the crumble topping over the peaches.
  7. Bake: Place the pan on a baking sheet and bake for 35-40 minutes, until the filling is bubbly and the topping is deep golden brown.
  8. Cool: Let the bars cool in the pan on a wire rack for at least 30 minutes.
  9. Slice and serve: Use the parchment sling to lift the bars out of the pan. Cut into squares with a sharp knife. Serve warm or at room temperature.

Notes

Don’t skip the pre-bake step for the crust to avoid sogginess. Use cold butter for flaky layers. Let the peaches sit for 5 minutes after tossing with sugar and cornstarch to draw out juices. Cool completely before slicing to allow the filling to set. For a gluten-free version, use a 1:1 gluten-free baking blend. For a vegan version, use vegan butter sticks and a flax egg.
