Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking pan with parchment paper.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a separate large bowl, beat softened butter with egg and vanilla extract until smooth and fluffy, about 2-3 minutes.
  4. Gradually add the dry flour mixture to the butter mixture, stirring gently until a soft dough forms. Add more flour if too sticky.
  5. Press the dough evenly into the prepared pan, forming a round pizza shape about 1/4 inch thick.
  6. Bake the crust for 15-18 minutes until edges are lightly golden. Let cool completely on a wire rack.
  7. Beat cream cheese, sugar, vanilla extract, and lemon juice until smooth and creamy, about 3-4 minutes.
  8. Spread the frosting evenly over the cooled crust about 1/4 inch thick.
  9. Arrange the fruit on top in a patriotic flag pattern: blueberries in the top left corner, alternating rows of strawberries and kiwi for stripes, add raspberries or red grapes if desired.
  10. Chill the assembled fruit pizza in the fridge for at least 30 minutes before slicing.
