A simple and festive fruit pizza on a soft sugar cookie crust topped with a smooth cream cheese layer and fresh berries arranged like the American flag. Perfect for summer celebrations and easy to customize.

Ingredients

Scale
  • 1 package (approx. 15.8 oz / 450g) refrigerated sugar cookie dough
  • Optional: a pinch of sea salt
  • 8 oz (225g) cream cheese, softened (full-fat recommended)
  • 1/2 cup (60g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 2 tablespoons (30 ml) heavy cream or whole milk
  • 1 cup (150g) fresh strawberries, hulled and sliced thin
  • 1 cup (150g) fresh blueberries
  • 1 cup (150g) fresh raspberries (optional)
  • 1 kiwifruit, peeled and sliced (optional)
  • Optional glaze: 1/4 cup (60 ml) apricot jam, warmed and strained

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheet or pizza pan with parchment paper or a silicone baking mat.
  2. Take the refrigerated sugar cookie dough out and let it soften slightly until pliable but not sticky (about 10 minutes). Press the dough evenly into the prepared pan, about 1/4 inch thick. Smooth edges for an even border.
  3. Bake the crust for 15-18 minutes or until edges turn just golden. The center may still feel soft. Remove from oven and place on a cooling rack to cool completely (at least 30 minutes).
  4. While the crust cools, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy. Slowly add heavy cream or milk until spreadable consistency is reached.
  5. Wash and slice fruit: hull and thinly slice strawberries, peel and slice kiwi, rinse blueberries and raspberries, then pat dry.
  6. Spread the cream cheese topping evenly over the cooled sugar cookie crust using a spatula or offset knife.
  7. Arrange the fruit on top in the pattern of the American flag: blueberries in the top left corner for stars, horizontal rows of sliced strawberries for red stripes, and white space or sliced kiwi for white stripes. Raspberries can replace some strawberries for extra red color.
  8. Optional: Warm apricot jam and strain. Use a pastry brush to glaze the fruit for a shiny finish.
  9. Chill the fruit pizza for at least 30 minutes before serving to meld flavors and set the topping.

Notes

Keep cream cheese at room temperature for smooth mixing. Cool crust completely before adding topping to prevent melting. Pat fruit dry to avoid soggy crust. Glazing fruit with apricot jam is optional but recommended for shine and preservation. Can substitute gluten-free dough or dairy-free cream cheese for dietary needs.
