Creamy, no-cook overnight oats with peanut butter and banana that taste like dessert for breakfast. Ready in 5 minutes the night before for a grab-and-go morning meal.

  • 1/2 cup (50g) rolled oats (old-fashioned oats)
  • 1/2 cup (120ml) milk of choice (whole milk, oat milk, or almond milk)
  • 1/4 cup (60g) plain Greek yogurt
  • 1 tablespoon (12g) chia seeds (optional)
  • 1 tablespoon (15ml) maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1 medium ripe banana
  • 2 tablespoons (32g) creamy peanut butter
  • Optional toppings: sliced banana, extra peanut butter, chopped peanuts or walnuts, cinnamon, dark chocolate chips, honey or maple syrup

Instructions

  1. In a small bowl, mash the ripe banana with a fork until mostly smooth with a few small lumps.
  2. In a mason jar or airtight container, combine the milk, Greek yogurt, maple syrup (or honey), and vanilla extract. Stir briefly.
  3. Add the rolled oats, chia seeds (if using), and a pinch of salt. Stir until the oats are fully coated.
  4. Spoon the mashed banana and peanut butter into the jar. Stir gently to create ribbons of peanut butter throughout the oats—do not overmix.
  5. Seal the jar and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats. If too thick, add a splash of milk. Serve cold or microwave for 30-45 seconds if desired.
  7. Top with sliced banana, extra peanut butter, and any other desired toppings before serving.

Notes

For best texture, use rolled oats (not quick or steel-cut). Ripe bananas (spotty brown) provide natural sweetness and help thicken the oats. The peanut butter swirl is key—leave visible ribbons for best flavor. Oats keep in the fridge for up to 5 days. To freeze, store in a freezer-safe container for up to 3 months; thaw overnight in the fridge.
