  • 2 medium zucchinis (about 14 ounces), sliced into ¼-inch thick half-moons
  • 3 large garlic cloves, minced
  • ½ cup freshly grated parmesan cheese (about 50 grams)
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 1 teaspoon Italian seasoning
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • ½ teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Prep your ingredients: slice zucchini into ¼-inch thick half-moons, finely chop onion, mince garlic, and grate parmesan cheese.
  2. Heat a large non-stick or cast iron skillet over medium-high heat and add 2 tablespoons olive oil. Warm until shimmering but not smoking (about 1-2 minutes).
  3. Add ground turkey to the skillet, breaking it up with a spatula. Let it brown undisturbed for a few minutes to develop a crust. Season with salt, pepper, and Italian seasoning. Continue cooking until turkey is cooked through and no longer pink (8-10 minutes).
  4. Stir in the chopped onion and minced garlic. Cook until onions are translucent and fragrant (3-4 minutes).
  5. Add zucchini slices and optional red pepper flakes. Cook, stirring occasionally, until zucchini is tender but still slightly crisp (5-6 minutes). Increase heat if excess moisture accumulates to evaporate it.
  6. Sprinkle grated parmesan over the skillet and gently stir to combine. Let cheese melt slightly and coat the turkey and zucchini (1-2 minutes).
  7. Remove from heat, garnish with fresh parsley, and serve hot directly from the skillet.

Notes

If skillet looks dry during cooking, add a splash of chicken broth or water to prevent sticking and maintain moisture. Avoid overcooking zucchini to prevent sogginess by cooking uncovered over medium-high heat. Freshly grated parmesan is recommended for best flavor. Adjust seasoning as parmesan adds saltiness. Variations include swapping zucchini for summer squash or spaghetti squash, or using ground chicken or lean beef instead of turkey.
