A quick and easy nut-free snack box perfect for preschool, featuring a balanced mix of protein, produce, and a little something fun. It comes together in under 10 minutes and is a crowd-pleaser that teachers and kids love.

Ingredients

Scale
  • 4 oz cooked chicken breast or turkey, diced
  • 2 tbsp plain Greek yogurt or cream cheese
  • 1/4 cup shredded cheddar cheese (optional)
  • 1/2 cup cucumber slices, cut into rounds or half-moons
  • 1/4 cup bell pepper strips (red or orange)
  • 1/4 cup whole-grain crackers or pretzel sticks (nut-free facility)
  • 1/2 cup fresh berries (blueberries, strawberries, or raspberries)
  • 1 small apple or pear, sliced (tossed with lemon juice)
  • 2 tbsp sunflower seed butter or pumpkin seed butter
  • Optional: hard-boiled egg, halved
  • Optional: string cheese, cut into bite-sized pieces
  • Optional: roasted chickpeas
  • Optional: small container of hummus or guacamole

Instructions

  1. In a small bowl, combine 4 oz of diced cooked chicken or turkey with 2 tbsp of plain Greek yogurt or cream cheese. Mix until the meat is evenly coated.
  2. Rinse the cucumber and bell pepper. Slice the cucumber into rounds or half-moons, about 1/4 inch thick. Cut the bell pepper into thin strips, about 2 inches long.
  3. Rinse the berries and pat them dry. If using an apple or pear, slice into thin wedges and toss with a squeeze of lemon juice to prevent browning.
  4. Spoon 2 tbsp of sunflower seed butter or pumpkin seed butter into a small silicone cup or a compartment of the bento box. If adding hummus or guacamole, do the same.
  5. Arrange all components in the bento box compartments: protein base in one section, veggies in another, fruit in a third, and crackers in a fourth. Place the dip in its own small container or cup.
  6. If including optional extras like hard-boiled egg, string cheese, or roasted chickpeas, tuck them into any remaining spaces.
  7. Close the lid securely and place an ice pack on top if using any dairy or dips. Store in the refrigerator until ready to leave. The box will stay fresh for up to 4 hours with an ice pack.

Notes

Batch prep on Sundays by washing and slicing veggies, and portioning out the chicken and yogurt mixture. Use the ‘deconstructed’ method to keep everything separate for kid appeal. Rotate fruits to keep kids interested. Don’t skip the dip—it makes everything more fun. Always double-check cracker labels for nut-free facility processing.
