A refreshing no-bake dessert featuring layers of graham crackers, whipped cream, and fresh strawberries, blueberries, and raspberries. Perfect for summer treats and gatherings.

  • 12 full sheets graham crackers, broken into pieces
  • 2 cups (480 ml) heavy whipping cream, cold
  • 1/3 cup (40 g) powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup strawberries, hulled and sliced
  • 1 cup blueberries, fresh or thawed if frozen
  • 1 cup raspberries, fresh
  • Optional: 1 tablespoon lemon zest or a splash of lemon juice

Instructions

  1. Rinse the strawberries, blueberries, and raspberries gently under cold water. Pat dry with paper towels. Hull and slice the strawberries into thin pieces. Set aside about 1/4 cup of each berry for the top garnish.
  2. Chill your mixing bowl and beaters in the fridge for 10 minutes beforehand if possible. Pour 2 cups (480 ml) of heavy whipping cream into the cold bowl. Add 1/3 cup (40 g) powdered sugar and 1 teaspoon vanilla extract. Using an electric mixer on medium-high speed, whip until the cream forms soft peaks (about 3-5 minutes).
  3. In a 9×9-inch (23×23 cm) pan, start with a single layer of graham crackers, breaking them to fit snugly. Spread about one-third of the whipped cream evenly over the crackers. Sprinkle one-third of the mixed berries over the cream. Repeat this layering process two more times: graham crackers, cream, berries. Smooth the cream layers gently with a spatula.
  4. Finish with a final layer of whipped cream and arrange the reserved berries on top for presentation.
  5. Cover the pan with plastic wrap or a lid and refrigerate for at least 4 hours, preferably overnight, to allow the graham crackers to soften and absorb the cream and berry juices.
  6. Slice into squares and serve cold. Optionally, dip your knife in hot water and wipe dry between cuts for clean slices.

Notes

Chill mixing tools before whipping cream for better results. Pat berries dry if very juicy to avoid soggy cake. Overnight chilling is best for texture. Dip knife in hot water between slices for clean cuts. Variations include dairy-free cream substitutes and gluten-free cookie alternatives.
