A quick, festive, and fuss-free no-bake cheesecake layered with fresh red, white, and blue berries in portable jars, perfect for summer celebrations and Fourth of July parties.

  • 5 tablespoons (70g) unsalted butter, melted
  • 2 tablespoons (25g) granulated sugar
  • 8 oz (225g) cream cheese, softened
  • ¾ cup (90g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1 cup (240ml) heavy whipping cream, chilled
  • 1 tablespoon fresh lemon juice
  • 1 cup (about 150g) fresh strawberries, hulled and sliced
  • 1 cup (150g) fresh blueberries, washed and drained
  • ½ cup fresh raspberries (optional)

Instructions

  1. Prepare the crust: In a medium bowl, combine graham cracker crumbs, melted unsalted butter, and granulated sugar. Mix until crumbs are evenly coated and look like wet sand. Add more melted butter if too dry. Set aside.
  2. Make the cheesecake filling: Beat softened cream cheese on medium speed until smooth and creamy, about 2 minutes. Gradually add powdered sugar and vanilla extract. Beat until fully combined and no lumps remain.
  3. Whip the cream: In a separate chilled bowl, whip heavy whipping cream on high speed until soft peaks form, about 3-4 minutes. Avoid overwhipping.
  4. Combine filling and cream: Add fresh lemon juice to the cream cheese mixture and mix briefly. Gently fold whipped cream into the cream cheese mixture using a spatula to preserve airy texture.
  5. Assemble the jars: Spoon about 2 tablespoons of graham cracker crust into the bottom of each jar and press down to form a compact base. Add about ¼ cup (60ml) cheesecake filling on top.
  6. Layer the berries: Add a layer of sliced strawberries (about 2 tablespoons), followed by another ¼ cup (60ml) cheesecake filling. Top with fresh blueberries (about 2 tablespoons). Repeat layering if jars are tall enough, finishing with berries on top.
  7. Chill and serve: Refrigerate jars for at least 2 hours to set. For best flavor, chill overnight. Serve cold straight from the fridge.

Notes

Keep cream cheese at room temperature for smooth mixing. Avoid overwhipping cream to maintain silky texture. Press crust firmly into jars to avoid crumbling. Assemble jars close to serving time to prevent sogginess. Can store refrigerated up to 3 days. For dairy-free, use coconut-based cream cheese and cream. For gluten-free, substitute crust with almond flour or gluten-free crumbs.
