Easy Mini Turkey Meatball Lunchbox Skewers

These mini turkey meatball skewers are a quick, fun, and protein-packed lunchbox solution that kids and adults love. Ready in about 30 minutes, they’re perfect for meal prep and can be customized with different flavors and veggies.

  • 1 pound (450g) ground turkey (93% lean recommended)
  • 1/2 cup (60g) plain breadcrumbs (or panko)
  • 1 large egg
  • 1/4 cup (25g) grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil
  • 1 cup (150g) cherry tomatoes
  • 1/2 cup (75g) fresh mozzarella pearls
  • Fresh basil leaves (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium mixing bowl, combine ground turkey, breadcrumbs, egg, Parmesan, garlic powder, oregano, salt, black pepper, and red pepper flakes (if using). Mix gently with your hands until just combined. Do not overmix.
  3. Using a small cookie scoop or your hands, form the mixture into 24 mini meatballs, each about 1 inch (2.5cm) in diameter. Place them on the prepared baking sheet, spacing about an inch apart. Drizzle with olive oil and roll to coat lightly.
  4. Bake for 12-15 minutes, until golden brown and cooked through (internal temperature of 165°F / 74°C). Let cool on the baking sheet for 5 minutes to firm up.
  5. Assemble the skewers: Thread meatballs onto short skewers, alternating with cherry tomatoes, mozzarella pearls, and basil leaves (if using). Each skewer gets 2-3 meatballs.
  6. Pack the assembled skewers in a lunchbox container. Serve warm, at room temperature, or cold.

Notes

Let meatballs rest for 5 minutes after baking to prevent crumbling on skewers. Use wet hands for easier rolling. For gluten-free, use almond flour or gluten-free breadcrumbs. For dairy-free, skip Parmesan and use nutritional yeast. Meatballs can be frozen for up to 3 months. Assemble skewers fresh for best texture.
