  • 8 large eggs, room temperature
  • ½ cup small-curd cottage cheese
  • 1 cup shredded cheddar cheese
  • ½ cup diced bell peppers (red or green)
  • ¼ cup finely chopped onion
  • 1 cup cooked breakfast sausage or bacon, crumbled (optional)
  • 68 pieces 10-inch flour tortillas
  • Salsa or hot sauce, for serving
  • Salt and pepper, to taste
  • 1 tablespoon olive oil or butter

Instructions

  1. Heat 1 tablespoon of olive oil or butter in a large skillet over medium heat. Add diced bell peppers and chopped onion. Sauté for about 5 minutes until softened but still slightly crisp. Remove from skillet and set aside.
  2. In the same skillet, cook breakfast sausage or bacon until browned and cooked through. Drain excess grease and crumble or chop into bite-sized pieces. Set aside with the veggies.
  3. In a mixing bowl, whisk together 8 large eggs and ½ cup small-curd cottage cheese until smooth and slightly frothy. Season with salt and pepper.
  4. Return skillet to medium-low heat and lightly grease with butter or oil. Pour in egg mixture and gently stir with a silicone spatula, folding slowly to create soft, fluffy curds. Cook for 5-7 minutes until eggs are just set but still moist. Remove from heat.
  5. Add sautéed veggies, cooked sausage or bacon, and 1 cup shredded cheddar cheese to the scrambled eggs. Stir gently to combine, allowing cheese to melt slightly from residual heat.
  6. Warm tortillas one at a time in a dry skillet over medium heat for about 15 seconds per side or microwave covered with a damp paper towel for 20 seconds to make them flexible.
  7. Lay one tortilla flat and spoon about ½ cup of the egg filling mixture into the center. Fold sides over filling, then roll tightly from one end to the other, tucking in edges to form a secure burrito.
  8. Wrap each burrito tightly in plastic wrap or foil. Place on a baking sheet and freeze individually for about 2 hours. Once frozen, store burritos in a large freezer bag for up to one month.
  9. To reheat, remove plastic wrap and microwave burrito on a microwave-safe plate for 2-3 minutes or until heated through. For a crispier tortilla, unwrap and briefly pan-toast in a skillet for 1-2 minutes per side after microwaving.

Notes

Warm tortillas gently before rolling to prevent cracking. Do not overcook eggs; they continue cooking after removal from heat. Freeze burritos individually on a baking sheet before bagging to prevent sticking. For best texture, reheat in oven wrapped in foil or microwave then pan-toast.
