This quick and easy cranberry sauce combines tart cranberries with bright orange zest and subtle rosemary for a perfectly balanced, crowd-pleasing holiday side dish.

  • 12 oz fresh or frozen cranberries
  • ¾ cup granulated sugar
  • ½ cup fresh orange juice
  • 1 tablespoon fresh orange zest
  • 1 large sprig fresh rosemary (about 6 inches)
  • ½ cup water

Instructions

  1. Zest and juice the orange first. Wash the orange well, then use a microplane to remove the zest, being careful to avoid the white pith. You need about 1 tablespoon of zest. Then cut the orange in half and juice it until you have ½ cup. Set both aside.
  2. Bloom the rosemary in the sugar syrup. In a medium saucepan, combine the sugar, water, and the sprig of fresh rosemary. Stir gently over medium heat until the sugar dissolves completely—about 2 to 3 minutes. Let it simmer for another minute.
  3. Add the cranberries and orange juice. Remove the rosemary sprig (or leave it in for a stronger flavor). Add the fresh cranberries and the orange juice. Stir everything together.
  4. Bring to a boil, then reduce to a simmer. Turn the heat up to medium-high and bring the mixture to a full boil. Once it boils, reduce the heat to low so it is at a gentle simmer. Let it cook for 8 to 10 minutes, stirring occasionally.
  5. Check for doneness. The cranberries should be mostly broken down, and the sauce should coat the back of a spoon. For a chunkier sauce, cook for only 7 minutes. For a smoother sauce, cook for 12 minutes and mash the berries gently with your spoon.
  6. Stir in the orange zest. Remove the pot from the heat. Stir in the fresh orange zest.
  7. Cool and serve. Let the sauce cool in the pot for about 10 minutes, then transfer it to a serving bowl or jar. It will continue to thicken as it cools. Serve warm or at room temperature.

Notes

This sauce tastes even better the next day. Make it up to 3 days in advance and store in the refrigerator. For a lower-sugar option, use ½ cup coconut sugar or maple syrup. If using frozen cranberries, do not thaw them first; add them straight to the pot frozen and cook for an extra 2-3 minutes.
