Ingredients

  • Cheddar cheese, sliced or cubed (sharp or mild)
  • Turkey or ham deli meat, thinly sliced (nitrate-free if possible)
  • Assorted crackers (buttery round crackers or multigrain)
  • Baby carrots or cucumber slices
  • Grapes or apple slices
  • Mayonnaise (½ cup)
  • Sour cream or Greek yogurt (¼ cup)
  • Dijon mustard (1 tablespoon)
  • Honey (1 tablespoon)
  • Ranch seasoning mix (1 teaspoon)
  • Fresh lemon juice (1 teaspoon)
  • Salt and black pepper to taste

Instructions

  1. Prepare the Dip (5 minutes): In a small bowl, whisk together ½ cup mayonnaise, ¼ cup sour cream or Greek yogurt, 1 tablespoon Dijon mustard, and 1 tablespoon honey. Add 1 teaspoon ranch seasoning mix, 1 teaspoon fresh lemon juice, and a pinch of salt and black pepper. Taste and adjust seasoning as needed.
  2. Slice the Cheese and Meat (5 minutes): Using a sharp knife, cut cheddar cheese into bite-sized cubes or thin slices. Fold or roll thin slices of turkey or ham. Aim for about 2 ounces of cheese and meat per snack box.
  3. Prepare the Fresh Elements (5 minutes): Wash and dry baby carrots or slice cucumbers into rounds. Core and slice apples thinly (toss with a little lemon juice to prevent browning). Rinse grapes and pat dry.
  4. Assembly (5 minutes): Arrange the cheese, meat, crackers, and fresh produce neatly into snack box compartments. Place a small container or section of the honey mustard ranch dip for dipping or spreading. Avoid overcrowding to keep crackers crisp.
  5. Storage Notes: If preparing ahead, keep snack boxes refrigerated and assemble crackers fresh if possible to prevent sogginess. The dip holds up well overnight.
