  • 1 package (10 ounces) regular marshmallows
  • 6 cups Rice Krispies cereal
  • 1/2 teaspoon vanilla extract (optional)
  • Orange gel food coloring
  • 1 bag green M&Ms
  • Optional: black decorating gel
  • Optional: cinnamon sugar

Instructions

  1. Prep your workspace: Line a 9×13-inch baking dish with parchment paper, leaving overhang. Set aside a second sheet of parchment for pressing. Have green M&Ms ready in a small bowl.
  2. Melt the butter: Place a large pot over medium-low heat and add 6 tablespoons unsalted butter. Melt slowly, swirling occasionally, until fully melted but not browning.
  3. Add the marshmallows: Dump in the entire 10-ounce bag of marshmallows. Stir constantly with a silicone spatula until completely smooth and no lumps remain, about 4-5 minutes.
  4. Add vanilla and food coloring: Remove pot from heat. Stir in 1/2 teaspoon vanilla extract. Add orange gel food coloring starting with 1/4 teaspoon, stirring well. Add more until you reach a pumpkin-orange shade (go a shade darker than desired, as color lightens with cereal).
  5. Fold in the cereal: Pour 6 cups Rice Krispies into the pot. Fold gently with a spatula until every piece is coated, being careful not to crush the cereal.
  6. Press into the pan or shape immediately: Option A: Pour mixture into prepared pan, press down firmly with parchment, cool 15 minutes, cut into squares, and shape each into a pumpkin ball. Option B (preferred): Let mixture cool in pot 3-4 minutes, then with wet hands, shape golf ball-sized portions into pumpkin forms with gentle indentations. Place on parchment-lined cookie sheet.
  7. Add the stem: While treats are still warm, press one green M&M into the top center of each pumpkin. If it doesn’t stick, dab a bit of leftover marshmallow mixture on the bottom first.
  8. Let them set: Cool completely at room temperature, about 20 minutes, before moving or stacking.

Notes

Keep heat on medium-low to avoid scorching. Wet hands with cool water to prevent sticking. Don’t overpress the mixture. These taste even better the next day. Store in an airtight container at room temperature for up to 3 days. Freeze for up to 2 months.
