  • 2 tablespoons brown sugar (light brown preferred)
  • 1 teaspoon lemon juice
  • 1 teaspoon cornstarch
  • 3 tablespoons rolled oats (old-fashioned oats work best)
  • 2 tablespoons all-purpose flour (use gluten-free flour for GF option)
  • 2 tablespoons unsalted butter, cold and diced
  • 1/4 teaspoon cinnamon
  • a pinch of salt
  • 1/4 teaspoon vanilla extract (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and place a rack in the middle position.
  2. In a small bowl, combine the sliced peach with 2 tablespoons brown sugar, 1 teaspoon lemon juice, and 1 teaspoon cornstarch. Toss gently to coat all slices evenly.
  3. In another bowl, mix 3 tablespoons rolled oats, 2 tablespoons all-purpose flour, 1/4 teaspoon cinnamon, and a pinch of salt. Add the cold diced butter and, using a pastry cutter or your fingers, work it into the dry ingredients until the mixture resembles coarse crumbs. Stir in 1/4 teaspoon vanilla extract if using.
  4. Spoon the peach mixture into your ramekin, spreading it evenly. Sprinkle the oat crumble evenly over the top, covering the peaches completely.
  5. Place the ramekin on a baking sheet and bake for 20–25 minutes, or until the topping is golden brown and the peach juices are bubbling around the edges.
  6. Let rest for 5 minutes before serving to allow the juices to thicken slightly.

Notes

Keep butter chilled until ready to mix for a lighter, flakier crumble. Use cornstarch to prevent soggy filling. If crumble browns too fast, cover loosely with foil and continue baking. Frozen peaches can be used if thawed and drained well. For dairy-free, substitute butter with coconut oil or plant-based margarine.
