  • Optional: 1/4 cup finely chopped white chocolate

Instructions

  1. Prepare your workspace. Line a baking sheet with parchment paper. Measure all your ingredients before you start. Set your cocoa powder in a shallow bowl nearby.
  2. Heat the cream. Pour the heavy cream into your saucepan and place it over medium heat. Watch it carefully — you want it hot but not boiling. Tiny bubbles should form around the edges, and steam should rise steadily. This takes about 3-4 minutes.
  3. Prepare the chocolate. While the cream heats, place your chocolate chips in the heatproof bowl. Add the softened butter on top. Don’t stir yet.
  4. Pour and wait. Once the cream is hot, pour it over the chocolate and butter. Let it sit undisturbed for 2 full minutes.
  5. Stir slowly. After 2 minutes, start stirring from the center outward using your whisk. Use slow, gentle circles. The chocolate will look separated and grainy at first — don’t panic. Keep stirring. After about 30 seconds, it will come together into a smooth, glossy ganache. If it doesn’t, you can microwave it in 10-second bursts, stirring between each.
  6. Add the cider and vanilla. Once the ganache is smooth, pour in the sparkling apple cider and vanilla extract. Stir gently until fully incorporated. Add your pinch of salt now. Taste it and adjust if needed.
  7. Chill the ganache. Cover the bowl with plastic wrap and refrigerate for 2 hours, or until firm enough to scoop. If you’re in a hurry, spread the ganache on a plate to cool faster — it will set in about 45 minutes.
  8. Scoop and shape. Once firm, use your cookie scoop to portion out the truffles. Roll each portion between your palms to form a smooth ball. If the ganache gets too soft, pop it back in the fridge for 10 minutes.
  9. Dust with cocoa. Roll each truffle in the cocoa powder until fully coated. Use your fine-mesh strainer to dust a little extra on top for that professional look. Place the finished truffles on your parchment-lined sheet.
  10. Final chill. Refrigerate the truffles for at least 30 minutes before serving.

Notes

For best results, use high-quality chocolate and naturally sparkling apple cider. The ganache can be made the night before and chilled overnight. Truffles taste even better on day two. For a dairy-free version, use full-fat coconut cream and dairy-free chocolate chips. For adult-only version, substitute 3 tablespoons real champagne (let sit 10 minutes to lose carbonation).
