  • 4 ounces Brie Cheese, soft and ripe
  • 4 ounces Aged Cheddar, sharp and crumbly
  • 2 ounces Manchego Cheese, sliced into thin wedges
  • 1/2 cup Mixed Olives (Castelvetrano or Kalamata), pitted
  • 1/4 cup Marcona Almonds, roasted and salted
  • 1/4 cup Dried Apricots, soft
  • 1/4 cup Dried Figs, halved
  • 2 tablespoons Honey, wildflower
  • 1 small Baguette, sliced into 1/2-inch rounds and lightly toasted
  • 1 cup Crackers, plain water or rosemary-infused
  • Fresh Grapes, a small cluster
  • Fresh Rosemary Sprigs, for garnish (optional)
  • Flaky Sea Salt, like Maldon, for finishing

Instructions

  1. Prep Your Ingredients (5 minutes): Take the brie out of the fridge 30 minutes before you start so it softens. Slice the baguette into 1/2-inch rounds and toast them in a 350°F oven for 5-7 minutes until just golden. Slice the cheddar into thin triangles and the Manchego into small wedges. Halve the dried figs and rinse the grapes.
  2. Place the Bowls (2 minutes): Arrange your small bowls or ramekins on the board first. I like to put them in a triangle pattern—one for the olives, one for the honey, and one for the almonds. This creates visual anchors and fills empty space.
  3. Add the Cheeses (3 minutes): Place the brie wheel in the center of the board, slightly off to one side. Arrange the cheddar triangles in a fan shape next to it, and place the Manchego wedges opposite the brie. The cheese should be the star, so give it room to breathe.
  4. Layer the Meats (3 minutes): Fold the prosciutto slices into loose ribbons and arrange them in a pile near the brie. For the salami, fold each slice in half, then half again, and stand them up in a small cluster. This creates height and texture. Don’t worry if they look messy—rustic is charming.
  5. Fill in with Fruits and Nuts (3 minutes): Scatter the dried apricots and figs in the gaps between the cheese and meat. Add the grapes in a small cluster. Sprinkle the almonds around the board, filling any empty spaces. The goal is to make it look abundant, not crowded.
  6. Add the Crackers and Bread (2 minutes): Arrange the toasted baguette slices and crackers in small piles around the edges of the board. I like to fan them out slightly so they’re easy to grab.
  7. Garnish and Finish (2 minutes): Drizzle a little honey over the brie and the manchego. Sprinkle a pinch of flaky sea salt over the entire board. Tuck a few fresh rosemary sprigs between the ingredients for color. Step back and admire your work!

Notes

For best flavor, bring cheeses to room temperature before serving. Do not microwave brie. Prep ingredients up to 2 hours ahead and assemble just before serving. The board is best enjoyed immediately at room temperature.
