Easy Crowd-Pleasing Cranberry Brie Bites with Puff Pastry

These golden, puffy little cups filled with bubbling brie and tart cranberry sauce are the perfect appetizer for any gathering. Quick, easy, and made with simple ingredients, they are a crowd-pleaser that looks like you spent hours on them.

  • 1 sheet frozen puff pastry, thawed
  • 4 ounces brie cheese (double or triple-cream, rind removed if desired)
  • 1/3 cup whole berry cranberry sauce
  • 1 large egg, beaten
  • Flaky sea salt, for sprinkling
  • Fresh rosemary or thyme, for garnish (optional)
  • Honey or maple syrup, for drizzling (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat. If using a mini muffin tin, lightly grease it with butter or non-stick spray.
  2. On a lightly floured surface, gently roll out the thawed puff pastry sheet to a 12-inch square, about 1/8-inch thick. Cut the pastry into 12 equal squares, roughly 3 inches each.
  3. Gently press each square into the wells of the mini muffin tin, allowing the corners to stick up. Do not stretch the pastry.
  4. Cut the brie into 12 small pieces, about 1/2 ounce each. Place one piece of brie into each pastry cup.
  5. Spoon about 1 teaspoon of cranberry sauce on top of each brie piece.
  6. In a small bowl, beat the egg with 1 tablespoon of water. Using a pastry brush, lightly brush the exposed pastry edges with the egg wash. Sprinkle a tiny pinch of flaky sea salt over each bite.
  7. Place the muffin tin on the prepared baking sheet. Bake for 15-18 minutes, or until the pastry is puffed and deep golden brown, and the brie is bubbly.
  8. Let the bites cool in the pan for 5 minutes. Use a small offset spatula or butter knife to gently lift them out. Transfer to a serving platter, drizzle with honey, and sprinkle with fresh rosemary or thyme if desired.

Notes

Do not skip the cooling step after baking—the cheese is molten hot and needs time to set. For make-ahead, assemble the bites up to 4 hours in advance and refrigerate, or freeze unbaked for up to 3 months. Bake from frozen, adding 3-5 minutes to the cooking time.
