This easy crockpot honey garlic chicken thighs and rice recipe is the ultimate hands-off dinner. Tender chicken thighs are slow-cooked in a sweet and savory honey garlic sauce, then served over fluffy rice for a comforting, family-friendly meal.

  • 2 pounds boneless, skinless chicken thighs (about 68 thighs)
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 45 cloves garlic, minced
  • 1/4 cup low-sodium chicken broth
  • 2 tablespoons rice vinegar
  • 1 teaspoon fresh grated ginger (or 1/2 teaspoon ground ginger)
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 1 teaspoon sesame oil (optional)
  • 2 cups dry white rice (long-grain or jasmine)
  • Green onions, sliced (for garnish)
  • Sesame seeds (for garnish)
  • Salt and pepper, to taste

Instructions

  1. Pat the chicken thighs dry with paper towels. Trim excess fat, season lightly with salt and pepper.
  2. In a small bowl, whisk together honey, soy sauce, minced garlic, chicken broth, rice vinegar, and grated ginger.
  3. Place chicken thighs in a single layer in the bottom of a 5-6 quart crockpot. Pour the sauce evenly over the chicken.
  4. Cover and cook on LOW for 4-5 hours or on HIGH for 2.5-3 hours, until chicken is fork-tender.
  5. About 30 minutes before the chicken is done, cook the rice according to package directions (2 cups dry rice with 4 cups water).
  6. When chicken is done, use tongs to transfer thighs to a plate. In a small bowl, whisk cornstarch with cold water until smooth.
  7. Turn crockpot to HIGH. Pour in the cornstarch slurry and whisk to combine. Cook uncovered for 10-15 minutes, stirring occasionally, until sauce thickens to a glossy, syrupy consistency.
  8. Return chicken to the crockpot and spoon sauce over the top. Drizzle with sesame oil if using. Let warm through for 2-3 minutes.
  9. Serve chicken and sauce over rice. Garnish with sliced green onions and sesame seeds.

Notes

Don’t lift the lid while cooking. Use chicken thighs for best results; breasts may dry out. For extra sauce, double the honey, soy sauce, broth, vinegar, and ginger. Adjust sweetness to taste with extra vinegar or honey. Toast sesame seeds for better flavor.
