  • 2 pounds boneless, skinless chicken breasts
  • 1 cup Frank’s RedHot Original Cayenne Pepper Sauce
  • 1/2 cup unsalted butter (1 stick), melted
  • 8 ounces block cream cheese, softened
  • 1 packet (about 1 ounce) ranch seasoning mix
  • 1215 slider buns (brioche or Hawaiian rolls recommended)
  • Blue cheese or ranch dressing for serving (optional)
  • Optional toppings: thinly sliced celery, shredded lettuce, pickled jalapeños, pickled red onion

Instructions

  1. Lightly spray the inside of a 6-quart slow cooker with non-stick cooking spray.
  2. In a small bowl, whisk together the Frank’s RedHot sauce and melted butter until well combined.
  3. Place the chicken breasts in the slow cooker in a single layer. Pour the buffalo sauce mixture over the chicken, then sprinkle the ranch seasoning evenly on top. Do not stir.
  4. Cover and cook on LOW for 3-4 hours or on HIGH for 2-3 hours, until the chicken reaches an internal temperature of 165°F and shreds easily.
  5. Remove the chicken to a cutting board and shred with two forks. Alternatively, shred directly in the slow cooker using a hand mixer on low speed.
  6. Return the shredded chicken to the slow cooker. Add the softened cream cheese and stir until fully melted and the sauce is creamy, about 2-3 minutes.
  7. Let the chicken rest in the sauce for 10 minutes to meld flavors and thicken slightly.
  8. Optional: Split slider buns in half and toast cut-side up under the broiler for 1-2 minutes until lightly golden.
  9. Spoon a generous amount of the buffalo chicken mixture onto the bottom half of each bun. Add optional toppings and top with the other bun half.
  10. Optional: Place assembled sliders on a baking sheet, brush tops with melted butter, and bake at 350°F for 5-7 minutes until buns are golden and filling is bubbly.

Notes

For best results, soften cream cheese to room temperature before adding. Toast buns to prevent sogginess. The filling can be made a day ahead and tastes even better the next day. For a milder version, reduce hot sauce to 1/2 cup and add more cream cheese. For an Instant Pot version, cook on high pressure for 10-12 minutes.
