  • 3 cups cooked, shredded chicken (about 2 large breasts or 1 rotisserie chicken)
  • 8 oz cream cheese, softened
  • 1/2 cup buffalo wing sauce (such as Frank’s RedHot)
  • 1/2 cup ranch dressing (or blue cheese dressing)
  • 1 cup shredded sharp cheddar cheese (shredded from a block)
  • 1/4 cup crumbled blue cheese (optional)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • Sliced green onions or fresh chives for garnish (optional)

Instructions

  1. Prep the chicken: If using rotisserie chicken, remove skin and bones, then shred meat using two forks or a hand mixer. If cooking your own, place two boneless, skinless chicken breasts in a pot, cover with water, bring to a boil, then simmer for 15-20 minutes until cooked through. Let cool slightly, then shred.
  2. Soften the cream cheese: Remove cream cheese from fridge and let sit at room temperature for 30 minutes.
  3. Combine the base: In a mixing bowl, combine softened cream cheese, buffalo wing sauce, ranch dressing, garlic powder, and onion powder. Stir until a cohesive, slightly chunky paste forms.
  4. Assemble in the crockpot: Spray the inside of a 3-4 quart slow cooker with non-stick cooking spray. Add shredded chicken. Pour cream cheese mixture over the top. Sprinkle in 3/4 cup of the shredded cheddar cheese. Stir to combine.
  5. Cook: Cover and cook on LOW for 2 hours or on HIGH for 1 hour. Stir once halfway through.
  6. Melt remaining cheese: About 10 minutes before serving, sprinkle remaining 1/4 cup cheddar and crumbled blue cheese (if using) over the top. Cover and let melt.
  7. Garnish and serve: Sprinkle with sliced green onions. Serve hot straight from the crockpot.

Notes

For the creamiest texture, use room temperature cream cheese and shred your own cheddar cheese. Avoid overcooking on HIGH to prevent the dip from becoming greasy. If the dip is too thin after 2 hours, stir in a slurry of 1 tablespoon cornstarch mixed with 1 tablespoon cold water and cook for another 15 minutes.
