  • 8 oz cream cheese (227 grams), softened
  • 1 cup powdered sugar (120 grams), sifted
  • 1 cup heavy whipping cream (240 ml), chilled
  • 1 teaspoon vanilla extract
  • 1 cup sliced strawberries
  • 1 cup blueberries
  • 2 medium kiwis, peeled and sliced
  • 1 large peach or nectarine, sliced (optional)
  • 1 cup mandarin orange segments, peeled (optional)
  • 2 tablespoons apricot jam, warmed (optional glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch pan with parchment paper or lightly grease it.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter with granulated sugar until light and fluffy, about 3-5 minutes.
  4. Beat in the eggs one at a time, then add the vanilla extract, mixing well after each addition.
  5. Gradually add the flour mixture to the butter mixture, mixing on low speed until just combined. Do not overmix.
  6. Press the dough evenly into the prepared pan using your fingers or an offset spatula. Chill for 10 minutes if sticky.
  7. Bake for 18-22 minutes or until edges are golden brown and a toothpick inserted near the center comes out clean.
  8. Cool the crust completely in the pan on a wire rack for at least 30 minutes.
  9. In a mixing bowl, beat the softened cream cheese with powdered sugar until smooth.
  10. In a separate bowl, whip the heavy cream with vanilla extract until stiff peaks form.
  11. Gently fold the whipped cream into the cream cheese mixture until combined and fluffy.
  12. Spread the creamy mixture evenly over the cooled cookie crust.
  13. Arrange the fresh fruit slices and berries on top as desired.
  14. Optionally, warm apricot jam and brush lightly over the fruit for a glossy finish.
  15. Refrigerate the fruit pizza for at least 1 hour to let the cream set before slicing and serving.

Soften cream cheese at room temperature for about 30 minutes before mixing for smooth texture. Tent crust edges with foil if browning too fast. Pat fruit dry to prevent soggy topping.
