A quick and easy overnight oats recipe combining creamy Greek yogurt, fresh strawberries, and ripe bananas for a nutritious and delicious breakfast perfect for meal prep.

  • 1 cup (90g) old-fashioned rolled oats
  • 1 cup (240ml) milk (dairy or plant-based, e.g., almond or oat milk)
  • ½ cup (120g) Greek yogurt, plain or vanilla
  • 1 tablespoon chia seeds
  • 12 tablespoons honey or maple syrup
  • ½ cup (about 75g) fresh strawberries, sliced
  • 1 medium ripe banana, sliced and mashed slightly
  • ½ teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Slice strawberries into thin pieces and set aside. Peel and slice the banana, then mash half of it gently with a fork.
  2. In a mixing bowl, combine rolled oats, chia seeds, and a pinch of salt.
  3. Add milk and Greek yogurt to the dry ingredients and stir well until evenly coated.
  4. Mix in honey or maple syrup, vanilla extract (if using), and mashed banana. Adjust sweetness to taste.
  5. Gently fold in sliced strawberries and remaining banana slices, reserving a few pieces for topping if desired.
  6. Spoon the mixture evenly into 2-3 glass jars or containers, seal tightly, and refrigerate overnight or for at least 6 hours.
  7. In the morning, stir each jar, add reserved fruit on top, and optionally sprinkle granola or chopped nuts before serving. Enjoy chilled or let sit at room temperature for 10 minutes if preferred.

Notes

If oats are too thick in the morning, stir in a splash of milk to loosen. If too thin, add a teaspoon of chia seeds next time. Use old-fashioned rolled oats for best texture. Frozen strawberries can be used if thawed and drained. For dairy-free, substitute Greek yogurt and milk with plant-based alternatives.
