  • 2 tablespoons chopped nuts (optional, pecans or almonds)

Instructions

  1. In a mixing bowl or large jar, combine 1 cup rolled oats, 1 cup milk, ½ cup Greek yogurt, 2 tablespoons maple syrup, 1 teaspoon vanilla extract, and ½ teaspoon cinnamon. Stir well to combine. Ensure oats are fully submerged. (5 minutes)
  2. Peel and dice 1 large peach into bite-sized pieces. Gently fold peaches into the oat mixture, reserving some for topping if desired. (5 minutes)
  3. In a small bowl, mix ¼ cup rolled oats, 2 tablespoons brown sugar, 2 tablespoons cold cubed butter, and optional 2 tablespoons chopped nuts. Use a pastry cutter or fingers to blend until coarse crumbs form. (5 minutes)
  4. Sprinkle the crisp topping evenly over the oat and peach mixture. (2 minutes)
  5. Cover and refrigerate for at least 6 hours or overnight to allow oats to soak and flavors to meld. (6+ hours)
