Easy Cranberry Orange Glazed Turkey Breast for Two

  • 1 (1.5 to 2 pound) boneless, skin-on turkey breast
  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • 1 cup fresh or frozen cranberries
  • ½ cup fresh orange juice
  • ¼ cup honey
  • 2 tablespoons brown sugar, packed
  • 1 tablespoon orange zest
  • 1 tablespoon apple cider vinegar
  • 1 small cinnamon stick (optional)
  • Pinch of ground cloves

Instructions

  1. Preheat your oven to 375°F (190°C). Take the turkey breast out of the fridge and let it sit at room temperature for about 20 minutes.
  2. In a medium saucepan, combine the cranberries, orange juice, honey, brown sugar, orange zest, apple cider vinegar, cinnamon stick (if using), and a pinch of ground cloves. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for about 10-12 minutes, stirring occasionally, until the cranberries have burst and the mixture has thickened slightly.   3. Pat the turkey breast dry with paper towels. In a small bowl, mix the softened butter, salt, pepper, dried thyme, and dried rosemary. Gently loosen the skin of the turkey breast with your fingers, being careful not to tear it. Rub about half of the herb butter directly under the skin, right onto the meat. Then rub the remaining butter all over the outside of the breast.
  4. Place the turkey breast skin-side up in your roasting pan. Roast for 30 minutes.
  5. After 30 minutes, remove the pan from the oven. Using a pastry brush, generously brush the turkey with the cranberry orange glaze. Return to the oven and roast for another 15 minutes.
  6. Brush with more glaze. Continue roasting for another 15-20 minutes, or until the internal temperature of the thickest part of the breast reaches 160°F (71°C). The skin should be deep golden brown and the glaze sticky and caramelized.
  7. Remove the turkey from the oven and tent it loosely with aluminum foil. Let it rest for 10-15 minutes. The internal temperature will rise to 165°F (74°C) during this time. Slice and serve with the reserved glaze on the side.

Notes

Pat the turkey dry for crispy skin. Watch the glaze to prevent burning; tent with foil if needed. Use a meat thermometer for perfect doneness. Let the turkey rest before slicing to keep it juicy. Double the glaze ingredients if you want extra for serving.
