Instructions

  1. Combine 1/2 cup natural peanut butter and 2 tablespoons honey or maple syrup in a mixing bowl; stir for about 2 minutes until sticky and glossy. Warm honey slightly if too thick.
  2. Slowly fold in 1/2 cup protein powder; mix well until fully incorporated and mixture thickens, about 3 minutes. Add a teaspoon of water or more honey if too dry, but avoid too much liquid.
  3. Gently fold in 1 cup rolled oats until evenly coated and mixture holds together, about 2-3 minutes. Avoid overmixing to keep chewy texture.
  4. Roll mixture into 1-inch balls using hands or a small cookie scoop, yielding about 12-14 balls. Wet hands slightly or chill dough for 10 minutes if mixture sticks.
  5. Place balls on parchment-lined baking sheet or plate and refrigerate for at least 30 minutes to firm up.
