A quick and easy sheet pan dinner featuring large shrimp coated in a buttery, smoky Cajun spice blend, baked to tender perfection with garlic and fresh parsley.

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon olive oil
  • Optional vegetables: 1-2 cups sliced bell peppers, cherry tomatoes, or asparagus

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse and pat dry the shrimp to remove excess moisture.
  3. In a medium bowl, combine melted butter, minced garlic, Cajun seasoning, and lemon juice. Whisk until well combined.
  4. Add shrimp to the bowl and toss until evenly coated with the garlic butter mixture. If using vegetables, toss them separately in olive oil and a pinch of salt.
  5. Arrange shrimp in a single layer on a rimmed baking sheet. Place vegetables around or beneath the shrimp if using.
  6. Bake in the preheated oven for 8-10 minutes, until shrimp turn pink and curl slightly and vegetables are tender.
  7. Optionally, halfway through baking (around 5 minutes), gently toss or flip the shrimp and vegetables for even cooking.
  8. Remove from oven and sprinkle chopped fresh parsley over the top. Add an extra squeeze of lemon juice before serving.

Notes

Pat shrimp dry before seasoning to avoid steaming and ensure a roasted flavor. Adjust baking time based on shrimp size. Use parchment paper on the sheet pan for easier cleanup. For dairy-free, substitute butter with olive oil or vegan butter. Do not overcrowd the pan to prevent steaming.
