This easy buffalo chicken dip is creamy, spicy, and perfect for game day. Made with simple ingredients like cream cheese, hot sauce, and shredded chicken, it comes together in under 30 minutes and is a guaranteed crowd-pleaser.

  • 2 (8-ounce) blocks cream cheese, softened
  • 1 cup ranch dressing (or blue cheese dressing)
  • 3/4 cup Frank’s RedHot Original Cayenne Pepper Sauce
  • 2 cups cooked, shredded chicken
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/2 cup crumbled blue cheese (optional)
  • 2 green onions, thinly sliced

Instructions

  1. Preheat and prep. If baking, preheat oven to 375°F (190°C). If using a slow cooker, set to low. Ensure cream cheese is softened.
  2. Shred the chicken. If using a rotisserie chicken, pull off meat and shred with two forks to get about 2 cups.
  3. Melt the cream cheese. In a skillet over medium-low heat, add softened cream cheese and stir constantly until smooth and creamy, about 3-4 minutes.
  4. Add the wet ingredients. Pour in ranch dressing and Frank’s RedHot. Stir until combined and smooth.
  5. Add the chicken and half the cheese. Stir in shredded chicken and 1 cup shredded cheddar. Keep stirring until cheese is melted and chicken is coated, about 2 minutes.
  6. Transfer to baking dish or slow cooker. If baking, pour mixture into greased 8×8 or 9-inch pie plate, top with remaining 1/2 cup cheddar and blue cheese (if using). Bake for 15-20 minutes until bubbly and golden. If using slow cooker, pour mixture in, set to low, and warm for about 1 hour. Sprinkle remaining cheese on top 10 minutes before serving.
  7. Garnish and serve. Sprinkle sliced green onions over top. Serve hot with tortilla chips, celery sticks, carrot sticks, or crusty bread.

Notes

For best results, soften cream cheese before melting to avoid lumps. Shred your own cheese for smoother melting. The dip can be made ahead and refrigerated; flavors meld and improve. If dip looks greasy after baking, stir before serving. To keep warm at parties, use a slow cooker set to warm.
