Instructions

  1. Prep the onions: Peel the onions and slice them into thin half-rings, about 1/4 inch thick.
  2. Brown the bratwurst: Heat olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat. Add bratwurst in a single layer and cook for 4-5 minutes per side until nicely browned. Remove to a plate and set aside.
  3. Cook the onions: Reduce heat to medium and add butter to the pot. Once melted, add sliced onions, salt, and pepper. Cook, stirring occasionally, until soft and golden, about 15 minutes.
  4. Deglaze the pot: Pour in the beer and scrape up browned bits from the bottom. Let bubble for about 30 seconds.
  5. Add remaining liquid: Stir in chicken broth, brown sugar, and Dijon mustard. Bring to a gentle simmer.
  6. Return bratwurst to the pot: Nestle the browned bratwurst back into the pot with the onions and liquid.
  7. Simmer: Cover the pot with the lid slightly ajar, reduce heat to low, and simmer gently for 25-30 minutes until brats are cooked through (internal temperature 160°F/71°C).
  8. Optional: Broil the brats: Preheat broiler. Place cooked brats on a baking sheet and broil for 1-2 minutes per side for a crispy exterior.
  9. Toast the buns: Split the buns and toast in the oven or toaster.
  10. Assemble and serve: Place a bratwurst on each bun, top with sweet onions using a slotted spoon, and drizzle with braising liquid if desired. Add optional toppings and serve immediately.
