Easy Bacon-Wrapped Green Beans with Brown Sugar Glaze

These bacon-wrapped green bean bundles are a sweet and savory side dish that turns a simple vegetable into the star of the plate. With a sticky brown sugar glaze and crispy bacon, they’re kid-approved and perfect for any occasion.

  • 1 lb (450g) fresh green beans, trimmed
  • 1216 slices thin-cut bacon, halved crosswise
  • 1/2 cup (100g) packed brown sugar (light or dark)
  • 2 tbsp (28g) unsalted butter
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil and place a wire rack on top.
  2. Blanch the green beans (optional but recommended): Bring a large pot of salted water to a boil. Add green beans and cook for 2-3 minutes until bright green and tender-crisp. Transfer to a bowl of ice water to stop cooking. Drain and pat completely dry.
  3. Make the glaze: In a small saucepan over medium-low heat, combine brown sugar, butter, garlic powder, and a pinch of salt and pepper. Stir constantly until butter is melted and sugar is dissolved, about 2-3 minutes. Remove from heat. Stir in red pepper flakes if using.
  4. Assemble the bundles: Gather 4-5 green beans together and wrap with one half-slice of bacon, spiraling from one end to the other. Place seam-side down on the prepared wire rack. Repeat with remaining beans and bacon (about 12-16 bundles).
  5. Brush each bundle generously with the brown sugar glaze. Reserve a little glaze for later.
  6. Bake for 20-25 minutes, until bacon is starting to crisp and glaze is bubbly.
  7. Switch oven to broil. Brush bundles with remaining glaze. Broil for 2-4 minutes, watching carefully, until bacon is crispy and glaze is caramelized.
  8. Let rest on baking sheet for 2-3 minutes before serving. Serve warm.

Notes

For best results, use thin-cut bacon and pat green beans completely dry after blanching. Watch the broiler closely to prevent burning. Bundles can be assembled up to 24 hours in advance and stored covered in the fridge; add glaze just before baking.
