Easy 5-Ingredient Tailgate Sausage Bites Recipe

tailgate sausage bites - featured image

These sticky, sweet-and-savory sausage bites are the ultimate one-handed tailgate food. Made with just five ingredients in one skillet, they disappear faster than you’d believe.

Ingredients

Scale
  • 1 package (14 oz) smoked sausage or kielbasa, sliced into 1-inch rounds
  • 1/3 cup brown sugar, packed
  • 1/4 cup ketchup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon hot sauce (e.g., Frank’s RedHot)

Instructions

  1. Slice the sausage into 1-inch rounds (cut on a slight diagonal for more surface area). Set aside.
  2. In a small bowl, whisk together brown sugar, ketchup, Dijon mustard, and hot sauce until smooth.
  3. Place a large skillet over medium-high heat. Add sliced sausage in a single layer (no oil needed). Cook undisturbed for 2-3 minutes until bottoms are browned, then flip and cook another 2 minutes.
  4. Pour the glaze mixture over the browned sausage. Stir to coat. Reduce heat to medium-low and simmer for 5-7 minutes, stirring occasionally, until glaze is syrupy and clings to each piece.
  5. Remove from heat and let rest 2-3 minutes. Transfer to a serving dish, stick a toothpick in each piece, and serve warm.

Notes

Don’t skip the sear—it adds texture and depth. Watch the heat to prevent burning the brown sugar. Make extra glaze for dipping. For a tailgate, transfer to a slow cooker set to warm. These taste even better the next day.
