  • 1/2 cup (125g) natural peanut butter (creamy or chunky)
  • 1 cup (90g) rolled oats (old-fashioned, not instant)
  • 2 tablespoons (40g) honey (or maple syrup for vegan option)
  • 1 teaspoon ground cinnamon (optional)

Instructions

  1. Mash 1 large ripe banana with a fork or potato masher until mostly smooth but still a bit chunky (about 2 minutes).
  2. Stir in 1/2 cup natural peanut butter and 2 tablespoons honey until fully combined (2-3 minutes).
  3. Add 1 cup rolled oats and 1 teaspoon cinnamon; fold gently until oats are evenly coated and mixture holds shape.
  4. Chill the mixture in the fridge for 10-15 minutes to firm up.
  5. Scoop out about 1 to 1.5 tablespoons of mixture and roll into balls (12-15 bites). Wet hands lightly if dough sticks.
  6. Place bites on a parchment-lined baking sheet or plate and refrigerate for at least 30 minutes before serving.
  7. Store leftovers in an airtight container in the fridge for up to one week.

Notes

Do not over-mash the banana to keep some texture. Chill mixture before rolling to prevent sticking. Adjust oats or almond milk to achieve desired dough consistency. Use natural peanut butter for best flavor and texture. Optional add-ins include mini chocolate chips, chopped walnuts, chia seeds, or flaxseeds.
