Ingredients

Scale
  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 3/4 cup (95g) all-purpose flour
  • 2 tablespoons (15g) unsweetened cocoa powder
  • 2 tablespoons red food coloring (preferably gel)
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 8 ounces (225g) cream cheese, softened
  • 1/3 cup (40g) powdered sugar
  • 1 large egg, room temperature
  • 1/2 teaspoon pure vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper with an overhang for easy removal.
  2. In a large bowl, whisk together melted butter and granulated sugar until combined but not grainy, about 1-2 minutes.
  3. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  4. In a separate bowl, sift together flour, cocoa powder, baking powder, and salt.
  5. Gently fold dry ingredients into the wet mixture just until no streaks remain. Avoid overmixing.
  6. Stir in red food coloring until batter is a consistent bright red.
  7. In a medium bowl, beat softened cream cheese with powdered sugar, egg, and vanilla extract until smooth and creamy.
  8. Pour half of the red velvet batter into the prepared pan and spread evenly.
  9. Dollop half the cream cheese mixture over the batter in spoonfuls.
  10. Repeat layers with remaining brownie batter and cream cheese mixture.
  11. Using a knife or skewer, gently swirl the cream cheese into the brownie batter in a figure-eight motion to create a marbled effect.
  12. Bake for 30-35 minutes, starting to check at 30 minutes by inserting a toothpick near the center; it should come out with a few moist crumbs but no wet batter.
  13. Let brownies cool completely in the pan on a wire rack. Use parchment paper overhang to lift brownies out before slicing.
  14. Chill brownies for at least an hour before cutting to make slicing easier and keep the cream cheese swirl intact.

Notes

Use softened cream cheese at room temperature for best swirl texture. Avoid overmixing the batter to keep brownies tender. Tent pan with foil after 25 minutes if edges brown too quickly. Chill brownies before slicing for cleaner cuts. For gluten-free, substitute all-purpose flour with a gluten-free baking blend. Vegan adaptations include flax eggs and dairy-free cream cheese.
