These crispy Parmesan zucchini fritters are an easy homemade snack featuring a savory, light fritter paired with a tangy garlic yogurt dip. Perfect for quick appetizers or casual snacking.

  • 2 medium zucchinis, grated (about 2 cups)
  • 1 teaspoon salt
  • 1/2 cup grated Parmesan cheese (about 50g)
  • 1/2 cup all-purpose flour (about 60g)
  • 2 large eggs, room temperature
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 tablespoons olive oil or vegetable oil for frying
  • 1 cup Greek yogurt (about 240g)
  • 1 garlic clove, minced finely
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh dill, chopped (optional)
  • Salt and pepper to taste

Instructions

  1. Grate the zucchinis using a box grater or food processor into a large bowl. Sprinkle with 1 teaspoon salt and toss gently. Let sit for 10 minutes to draw out moisture.
  2. Place the grated zucchini in a clean kitchen towel or cheesecloth. Twist and squeeze firmly over the sink to remove as much liquid as possible.
  3. In the bowl with the drained zucchini, add grated Parmesan, flour, eggs, black pepper, and garlic powder. Stir until combined into a sticky batter.
  4. Heat 2 tablespoons of olive or vegetable oil in a non-stick or cast iron skillet over medium heat until hot enough that a small drop of batter sizzles immediately.
  5. Scoop about 2 tablespoons (30g) of batter per fritter, flatten slightly, and place gently into the hot oil, leaving space between each. Fry for 3-4 minutes on each side until golden brown and crispy.
  6. Transfer cooked fritters to a plate lined with paper towels to absorb excess oil. Keep warm in a low oven (around 200°F / 90°C) if cooking in batches.
  7. While fritters cook, mix Greek yogurt, minced garlic, lemon juice, fresh dill (if using), and salt and pepper in a small bowl. Chill until ready to serve.
  8. Serve warm fritters with a generous dollop of garlic yogurt dip on the side.

Notes

Squeeze out zucchini moisture thoroughly to avoid soggy fritters. Use fresh grated Parmesan for best melting and flavor. Fry over medium heat to ensure fritters cook evenly without burning. If batter is too loose, add a little more flour but avoid making it dense. The garlic yogurt dip can be adjusted by roasting garlic for milder flavor. Leftovers keep well refrigerated for up to 3 days and reheat best in a skillet or oven to maintain crispiness.
