  • 3 tablespoons pure maple syrup
  • 1/2 cup pecans, roughly chopped
  • 2 tablespoons olive oil
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon black pepper, freshly ground
  • 1/2 teaspoon cinnamon (optional)
  • Fresh thyme or flaky sea salt for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large, rimmed baking sheet with parchment paper or a silicone mat.
  2. Wash the delicata squash thoroughly. Cut off the stem and bottom tip. Slice crosswise into 1/2-inch thick rings. Scoop out seeds and stringy pulp from the center of each ring.
  3. In a small bowl, whisk together maple syrup, olive oil, salt, pepper, and cinnamon (if using).
  4. Place squash rings in a large bowl. Pour the maple glaze over them and toss gently until evenly coated.
  5. Arrange the coated squash rings in a single layer on the prepared baking sheet, ensuring they are not overlapping.
  6. Roast for 15 minutes. Remove the pan and carefully flip each ring using a spatula.
  7. Sprinkle the chopped pecans evenly over the squash rings. Return to the oven and roast for another 10-12 minutes, until squash is tender and edges are crispy and caramelized.
  8. Let the squash rings rest on the pan for 2-3 minutes. Transfer to a serving platter, sprinkle with fresh thyme or flaky sea salt if desired, and serve warm.

Notes

For extra crispy edges, broil the squash for the last 1-2 minutes, watching carefully to prevent burning. If using salted pecans, adjust added salt accordingly. The squash is done when fork-tender but still holds its shape.
