  • 3 tablespoons pure maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper (optional)
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper, freshly ground
  • Fresh thyme or rosemary for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Wash the delicata squash thoroughly and pat dry.
  3. Slice off about ½ inch from both ends of each squash.
  4. Cut the squash crosswise into ½-inch thick rings.
  5. Use a small spoon or your fingers to gently push the seeds out of each ring.
  6. In a small bowl, whisk together the maple syrup, olive oil, smoked paprika, garlic powder, cayenne pepper, salt, and black pepper.
  7. Place the squash rings in a large bowl and pour the glaze over them. Use your hands to gently toss and coat each ring. Let them sit for 5 minutes.
  8. Arrange the rings in a single layer on the prepared baking sheet, leaving space between each one.
  9. Roast for 15 minutes.
  10. Carefully flip each ring using a metal spatula.
  11. Roast for another 10-15 minutes, until the edges are dark golden brown and crispy, and the centers are tender.
  12. Let the rings cool on the baking sheet for 2-3 minutes.
  13. Transfer to a serving platter and sprinkle with fresh thyme or rosemary if using. Serve warm or at room temperature.

Notes

Don’t overcrowd the pan—give the rings space to breathe for crispy edges. If rings stick when flipping, give them another 2-3 minutes. Let rest for 2-3 minutes after roasting to firm up. For extra crispy edges, brush remaining glaze from the bowl onto rings after flipping. Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in a 350°F oven for 5-7 minutes or in an air fryer at 350°F for 3-4 minutes. Avoid the microwave.
